Delicious aromas of Bing cherry, dried herbs, cedar and dark chocolate are complemented by lush flavors of wild blackberry, black tea, licorice and caramel. This wine finishes with full, rustic, age-worthy tannins and lingering flavors of vanilla bean, mocha and sweet oak.
Our mountain vines are dry farmed in shallow, rocky, low-vigor soil that add impressive depth and concentration of flavors to the wine. The season began with a dry winter, then frost in the spring followed by drought, and then wind and heat in the summer and early fall. A cooling trend brought a moderate ending to fall, and we picked the Cabernet Sauvignon grapes the first two weeks of October.
This wine is composed of primarily Cabernet Sauvignon, blended with a small amount of Syrah. The hand-harvested grapes enter the gravity-flow winery and are hand sorted, then whole berries are gravity fed into tanks for fermenting before pressing. Individual lots are moved to barrels for malolactic fermentation, then blended and barrel aged for 20 months and aged an additional six months in bottle, allowing for the perfect balance of fruit, tannin and oak.
