2000 Ferrari-Carano Eldorado Gold

This wine is made in the Sauternes style. It is a blend of completely botryised Sauvignon Blanc and Semillon grapes. It has intense honeysuckle and apricot aromas, rich and mouth-filling, vibrant flavors of honeydew and peaches with a brilliant, deep gold color.

Winemaker Notes

This late harvest wine is made from ripe grapes affected by the beneficial mold known as Botrytis cinerea, a mold known as the "noble rot" that shrivels the grapes and thus reduces their water content. The remaining juice is especially rich in sugar and when fermented into wine, retains a much higher than usual percentage of residual sugar.

Food Pairing

The Eldorado Gold is exceptional paired with light fruit desserts such as apricot or apple tart, lemon desserts, and hazelnut or almond cookies. Dense buttery pound cake, summer berries, crème brulee, caramel sauce and aged cheeses also pair nicely.
