2009 Ferrari-Carano PreVail Back FortyMountain Vineyards
Grown at 1,100-foot elevation, PreVail Back Forty 100% Cabernet Sauvignon displays delicious array of intense aromatics and flavors, like dark berries, spices, black tea, earth, cinnamon, ripe black cherry, espresso and dark chocolate. This full-bodied, juicy and viscous wine has excellent length and a lingering finish of smooth, mouth-coating tannins.

Impressive: a firm, richly flavored mountain Cabernet that is supple in texture, complex in flavor (cassis, blackberry, plum, black licorice, dried fig, cedar, toast) and long and moderately tannic on the finish. Warrants further aging.
A combination of French clones 337 and 338 were selected specifically for Back Forty because of their small berry size and rich tannins. The grapes are hand harvested,hand sorted and then gravity fed into oak tanks for four days of cold soaking, then fermented and macerated for 24 — 28 days on the skins. After primary fermentation, the wine is gravity fed to barrel and aged in the wine caves for 24 months, with an additional 14 months aging in bottle prior to release
Back Forty pairs well with roasted, broiled or barbequed red meats such as lamb, beef, pork or veal. Medium and strong-flavored semi-soft, semi-hard, aged or creamy cheeses work well, or pair Back Forty with a dark chocolate dessert for a special treat.
A moderate spring and a wonderfully warm and dry summer gave this Cabernet Sauvignon vineyard the perfect conditions to ripen fruit evenly. Our 2009 Back Forty displays deep, ripe fruit notes from the summer warmth while also showing the acidity and generous tannin structure of a wine produced from a shorter and abruptly-ended ripening season. Grapes were picked the end of October.
