Our Cabernet Sauvignon comes from mountain-grown fruit in Alexander Valley. Cedar, graphite, fresh blackberry and spice aromas delight with a soft mouth feel that boasts flavors of mocha, black tea, wild berry and clove. Velvety tannins and sweet notes of caramel and chocolate abound in the finish.

Our mountain vines are dry farmed in shallow, rocky, low-vigor soil that adds impressive depth and concentration of flavors to the wine. 2011 was one of the coolest growing seasons experienced in the valleys in a long time. We harvested the grapes about two weeks later than usual, starting mid September and completing harvest the middle of October.
This wine is composed primarily of Cabernet Sauvignon, blended with small amounts of Syrah and Petit Verdot. The hand-harvested grapes enter the gravity-flow winery and whole berries are gravity fed into tanks for fermenting before pressing. Individual lots are moved to barrels for malolactic fermentation, then blended and cave aged for 16 months prior to bottling, allowing for the perfect balance of fruit, tannin and oak.
Our Cabernet Sauvignon pairs well with roasted, broiled or barbecued game and red meats such as lamb, beef, pork and veal. Medium and strong-flavored cheeses, such as blue cheese or sharp Cheddar, also pair nicely with Cabernet Sauvignon.
