2011 Ferrari-Carano Dominique ChardonnayRussian River Valley
Our 2011 Dominique Chardonnay (“Dominique” is Rhonda Carano’s middle name) boasts full, silky aromas and flavors of apple, peach, fig, lemon, citrus, maple, vanilla, marshmallow and butter. Bright acidity with layers of intense aromas and flavors along with a toasty finish characterizes this beautiful wine.
The growing season got off to a late start with an unusually wet and cool spring. A late-season rain in early June stunted the size of the crop and created uneven growing patterns in many vineyards. Summer temperatures were cool overall until mid-September when temperatures reached the mid-90s for nearly a week. This led to great depth and higher concentration of flavors. The grapes for the Chardonnay were harvested from mid-September to mid-October.
A single vineyard site with four Chardonnay clones comprises our Dominique Chardonnay. Each lot for this wine is hand harvested, whole cluster pressed and within 24 hours moved directly to French oak barrels. Aged separately by lot, the wine undergoes 80 percent malolactic fermentation and is sur lie aged and stirred weekly for eight months until blending, and then further aged in neutral barrels until bottling seven months later.
Dominique is a full-bodied Chardonnay that pairs well with pasta dishes made with cream, butter or cheese. Try with shrimp, scallops, lobster and other rich seafood, or plank-grilled salmon. Also delicious with poultry, like turkey and gravy, or risotto, nuts and nutty cheeses that aren’t too pungent.
