2012 Ferrari-Carano SangioveseDry Creek Valley
This wine is luscious with aromas of black cherry, blueberry, black pepper and a hint of smoky bacon. Boysenberry, plum and licorice round out the viscous middle palate, while vanilla and spice nuances from aging in French oak complement the full, mouth-coating tannins, leaving a lasting finish. This wine has nice acidity, richness and volume throughout.
Overall, 2012 was a very good year with ideal weather conditions for the vines. Spring produced great set and average rainfall lead to nicely balanced yields. Consistently warm temperatures during the simmer months without any major heat spikes or rain events led to longer “hang time” for the grapes and fully ripe flavors.
Upon entering the winery, grapes are gently de-stemmed, hand sorted, then gravity fed to tank for three days of cold soaking prior to fermentation. Fermentation temperatures are kept at modest levels to retain brighter aromatics and flavors with less astringent tannins. After primary fermentation, the wine is gravity-filled directly into French oak barrels and cave-aged for 15 months, then aged an additional month in bottle prior to release.
Delicious with braised, roasted or barbequed meats such as chicken, red meat, fish lamb or pork. Pastas, stews or well-aged medium and strong-flavored cheeses such as Tellagio also pair nicely with our Sangiovese.
