2012 Ferrari-Carano Estate Olive Oil

This olive oil is produced from six types of olive trees: Frantoio, Leccino, Maurino, Moraiolo, Pendolino and Coratina.

Tasting Notes

The 2012 Ferrari-Carano Estate Olive Oil is unfiltered, resulting in a delicate and delicious oil that is green-gold in color with floral and spice notes and flavors of green apple, mint, cinnamon, and artichoke.

Processing Notes

We hand harvested olives for this blend on November 6 and December 10, 2012, from two uniquely different estate olive orchards. The olives were then transported to Olivino in Hopland, a leader in California's olive oil production. The olives were milled within hours of harvest using a hammer blade mill, then cold pressed. Using only gravity, the individual lots for this olive oil were racked once and blended after three months of settling to remove any olive sediment and to improve texture, acidity and mouthfeel.
