2012 Ferrari-Carano Mountain Estate Olive Oil

This olive oil is produced from eight types of olive trees: Frantoio, Leccino, Maurino, Moraiolo, Pendolino, Coratina, Taggaisca and Itrana.

Tasting Notes

The 2012 Ferrari-Carano Mountain Estate Olive Oil is unfiltered, resulting in a delicate and delicious oil that is green-gold in color with lots of floral and spice notes and flavors of ripe and green olive fruit, fresh cut grass, green apple, mint, nettle, and cinnamon.

Processing Notes

We hand harvested olives for this blend on November 9 and December 10, 2012, from two uniquely different estate olive orchards. The olives were then transported to Olivino in Hopland, a leader in California's olive oil production. The olives were milled within hours of harvest using a hammer blade mill, and then cold pressed. Using only gravity, the individual lots for this olive oil were racked once and blended after three months of settling to remove any olive sediment and to improve texture, acidity and mouthfeel.
