Step up the All-American favorite with a jammy concentrated sweet red onion marmalade with Gorgonzola cheese and bacon!
In skillet, sauté onions in butter with salt and pepper, stir until soft. Add sugar and cook the mixture until the onion is golden. Add balsamic vinegar and simmer until liquid is evaporated. Add beef broth, simmer the mixture until slightly thicken, but moist. Keep marmalade warm and covered.
Light the grill. Cut gorgonzola into 4 pieces and shape into 2 inch rounds. Shape the beef into 8 patties. Place gorgonzola round and bacon bits into 4 patties, top with the other 4 patties and press edges of the patties to seal the cheese and the bacon inside. Season both sides with salt and pepper.
Grill burgers on lightly oiled rack or cast-ironed skillet. Cook until medium rare, about 3 minutes per side.
Drizzle bun (or cut baguette) with olive oil and brown on grill. Serve with onion marmalade.
