La Tur Cheese with Chocolate Olive Oil Sauce and Morello Cherries

Ingredients

Prepare Cheese

  • 1 wheel of La Tur cheese *See note

Prepare chocolate

  • 2 oz. your favorite semisweet dark chocolate (65%), coarsely chopped to make 1/3 cup
  • 1/8 tsp. kosher salt
  • 2 tbsp. fruity extra virgin olive oil, plus more for drizzling
  • Pitted Morello cherries (½ - ¾ cup, quartered)

Prepare Baguette

  • 1 small, crusty ciabatta roll or a demi baguette

Prepare Cheese

Remove any labeling on wheel. With parchment paper, wrap cheese like a present to fully enclose cheese. Set packet, seam-side down, on a rimmed baking dish, let stand at room temperature until softened, at least 2 – 4 hours. *La Tur cheese is similar to Brie, but it is from the Piedmont area of Italy. It is a blend of cow, goat and sheep’s milk. Can be found at Whole Foods, Trader Joe’s or your favorite Cheesemonger.

Prepare chocolate

fill a small sauce pan with 2 inches of water and bring to a gentle simmer. Put chocolate and salt in a metal bowl, set bowl over simmering water, being careful that water does not get into bowl. Heat until chocolate is melted and salt is dissolved.

Remove from heat

Begin adding the olive oil in a slow, steady stream, whisking constantly

Add cherries

Set aside

Prepare Baguette

Turn oven broiler on and tear bread into small pieces. Arrange crust down on sheet pan with cheese package. Lightly drizzle bread with olive oil. Broil until both parchment paper and bread are charred. 3 – 4 minutes.

Plate

Transfer pan to a wire rack, let stand for a couple of minutes. Remove cheese package, seam side up, to a platter or a rustic wooden board, arrange the toasted bread around packet. Tear packet up on top and drizzle with chocolate cherry sauce and serve immediately with a glass of your favorite Trésor vintage.
