Marinated Sirloin With Gorgonzola Sauce

These juicy steaks with rich Gorgonzola cheese sauce pair perfectly with braised red wine sweet onions, crusty bread, green salad and a glass of Ferrari-Carano Zinfandel!

Trim steaks

Combine marinade ingredients. In a large glass baking dish add steaks and cover with marinade for at least 8 hours, better overnight.

Remove steaks from refrigerator. Allow to get to room temperature before grilling. Prepare grill. Grill or broil steaks to medium rare.

Sauce & Serve

Combine shallots and Madeira in medium sized pan and cook over high heat until wine is reduced by half. Remove from heat, whisk in butter, 1 Tbs at a time, making sure that butter is melted before adding more. Whisk in cheese.

Slice sirloin steaks thin, against the grain. Top with warm sauce and serve immediately. braised red wine sweet onions, crusty bread, green salad and a glass of Ferrari-Carano Zinfandel!

  • 4 10 oz steaks
  • 1 C good quality olive oil
  • 2 Tbs dry mustard
  • 1 Tbs Worcestershire sauce
  • 1 tsp garlic, minced
  • 1 tsp soy sauce
  • 1 tsp fresh lemon juice
  • Dash of pepper sauce* optional
  • Salt and freshly ground pepper

Sauce & Serve

  • 6 shallots, finely minced
  • 1/3 C Madeira
  • 1 1/2 C beef broth
  • 4 Tbs unsalted butter, room temperature
  • 4-6 oz Italian Gorgonzola cheese, crumbled
