PreVail West Face is a delicious, full-bodied wine with lush aromas and flavors of blackberry syrup, cedar, licorice, dark berries, clove, cola and dark chocolate. Exquisite depth and lingering, round tannins provide textural proof of this wine’s ageability.
PreVail West Face pairs well with braised, roasted or barbecued meats such as chicken, red meat, lamb or pork. Pastas, stews or well-aged medium and strong-flavored cheeses, such as Tellagio, also pair nicely.
How It's Made
Our PreVail West Face is a blend of Cabernet Sauvignon and Syrah. The grapes are hand harvested, and upon entering the winery, hand sorted and then gravity fed directly into oak tanks for three days of cold soaking, then fermented and macerated for 21 - 27 days on the skins. After primary fermentation, the wine is gravity fed to barrel and aged in the wine caves for 28 months, with an additional 8 months aging in bottle prior to release.
Record rainfall in the spring was followed by a mild summer; July being the coolest it’s been in 50 years. The mild weather led to grapes with higher acid levels at maturity, and which display fresh, vibrant, hand-picked-off-the-vine berry character. Harvest began early October, about two weeks later than normal, with the last grapes being picked in late October.
