Aromas & Flavors
PreVail West Face is a delicious, full-bodied wine with lush aromas and flavors of boysenberry, black cherry, spice, cedar, licorice, coffee and dark chocolate. Exquisite depth and lingering, firm tannins provide textural proof of this wine’s ageability.
PreVail West Face pairs well with braised, roasted or barbecued meats such as chicken, red meat, lamb or pork. Pastas, stews or well-aged medium and strong-flavored cheeses, such as Tellagio, also pair nicely.
How It's Made
Our PreVail West Face is a blend of Cabernet Sauvignon and Syrah. The grapes are hand harvested, and upon entering the winery, hand sorted and then gravity fed directly into oak tanks for three days of cold soaking, then fermented and macerated for 21-27 days on the skins. After primary fermentation, the wine is drained and pressed to barrels for malolactic fermentation and aged in the wine caves for 21 months, with an additional 14 months aging in bottle prior to release.
These 15-year-old mountain vines are grown in shallow, rocky, low-vigor soil that add impressive depth and concentration of flavors to the wine. Overall 2012 was a very good year with ideal weather conditions for the vines. Consistently warm temperatures during the summer months without any heat spikes or major rain events allowed for longer “hang time”, which led to fully ripe flavors. The grapes for West Face were picked mid October.
