Aromas & Flavors

This is a delicious wine with aromas and flavors of cinnamon, sage, mocha, tobacco, plum, wild berry, dried currants, mint and toasty nutmeg spice. With a viscous and full-bodied mid-palate, and structured, firm, gripping tannins, this wine has excellent depth and a finish that lingers with layers of fruit, spice and earthy elements.

Food Pairings

Our Cabernet Sauvignon pairs well with roasted, broiled or barbecued heavy game and red meats such as lamb, beef, pork and veal. Medium and strong-flavored cheeses, such as blue cheese or sharp cheddar, also pair nicely with this wine.

How It's Made

The hand-harvested grapes enter the gravity-flow winery and are hand sorted, cold soaked for three days, then whole berries are gravity fed into tanks for fermenting before pressing. Individual lots are moved to barrels for malolactic fermentation, then blended and barrel aged for 21 months allowing for the perfect balance of fruit, tannin and oak.

The Vintage

Overall, 2012 was a very good year with ideal weather conditions for the vines. Spring produced great set and average rainfall led to ideal yields. Consistently warm temperatures during the summer months without any heat spikes or major rain events allowed for longer “hang time” leading to fully ripe flavors.
