Eldorado Noir is a truly unique dessert wine made from Black Muscat grapes grown in the Russian River Valley. This wine has a beautiful dark, purple color with intense aromas of rose petals, blueberry jam and caramel leading to a wine that bursts with intense and luscious sweet raspberry on the palate.
The Eldorado Noir is exceptional paired with rich, decadent chocolate desserts, as well as vanilla bean ice cream or bread pudding with plum or persimmons. Fruit-based tarts, shortcakes, fruitcakes, pumpkin pie, pecan pie or baked apples also pair nicely with the Eldorado Noir.
How It's Made
Black Muscat grapes from our Russian River Valley Storey Creek vineyard were sorted and destemmed to a stainless steel tank for three days of cold soaking. Following the cold soak, yeast was added and pump overs commenced one to two times daily for the duration of primary fermentation. Once fermentation was completed, the wine was drained and pressed to neutral barrels for malolactic fermentation and seven months of cave aging before bottling in April 2016.
A dry winter led us into another year of drought conditions in Sonoma County for the 2015 vintage. The growing season began with an early bud break followed by unfavorable weather during bloom, disrupting the pollination process and resulting in a significant reduction in crop yields. Spring continued warm and dry into the summer months. The first red grapes were harvested a week and a half earlier than last year, making it one the earliest harvests on record. With reduced yields and plenty of warm sunshine to ripen the grapes, the wines of 2015 are concentrated in aromas and flavors, while displaying great color and balanced tannin structure.
