Aromas & Flavors

Our 2008 Ferrari-Carano Eldorado Gold comes from Sonoma County and is 100% Semillon. Intense aromas and flavors of dried apricot, honey, nutmeg, pralines and maple follow through to orange peel, pear and vanilla bean. A long, lingering finish echoes dried apricot and honey, along with caramel and pecans.

Food Pairings

The Eldorado Gold is exceptional paired with light fruit desserts such as apricot or apple tart, lemon desserts, and hazelnut or almond cookies. Dense buttery pound cake, summer berries, crème brulee, caramel sauce and aged cheeses also pair nicely.

How It's Made

The hand-harvested Semillon grapes are gently placed on trays and inoculated with a pure strain of botrytris cinerea, then dehydrated for 15 days before pressing. The pressed juice is cold settled for two days before inoculation with yeast, and fermented until the desired alcohol and residual sugar levels are met. The wine is barrel aged in French oak for 18 months before bottling.

The Vintage

We began 2008 battling heavy frost in April, and intense heat in the summer and early fall. Reduced yields but intensely flavored, well-balanced, ripe fruit was the happy result of a very challenging growing season. The heat in early fall raised sugar to optimal levels, and the Semillon grapes were picked September 19 and October 20.
